- 2 tablespoons olive oil

- 1 cup bbq sauce
- 1/4 cup honey
- 1 cup long grain rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 head romaine lettuce, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickled onions
- 1/4 cup chopped cilantro
- 1/4 cup ranch dressing
Instructions
- Cook the rice according to package instructions.
- In a large pan, heat olive oil over medium heat.
- Season the chicken breast with salt, pepper, paprika, and garlic powder.
- Add the chicken to the pan and cook for about 6-7 minutes on each side, or until fully cooked.
- In a bowl, combine the BBQ sauce and honey, then pour it over the chicken in the pan. Stir until the chicken is coated and let it simmer for a few minutes to thicken the sauce.
- In serving bowls, layer the rice, black beans, corn, chopped lettuce, and then slice the BBQ chicken on top.
- Garnish each bowl with shredded cheddar, pickled onions, cilantro, and ranch dressing to taste.
