Description

These Honey BBQ Chicken Bowls offer an irresistible flavor with simple preparation. Featuring tender chicken, savory BBQ sauce, and nutritious ingredients, this dish is perfect for a quick dinner or a satisfying meal.


Ingredients

  • 2 pounds chicken breast
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup bbq sauce
  • 1/4 cup honey
  • 1 cup long grain rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 head romaine lettuce, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup pickled onions
  • 1/4 cup chopped cilantro
  • 1/4 cup ranch dressing

Instructions

  1. Cook the rice according to package instructions.
  2. In a large pan, heat olive oil over medium heat.
  3. Season the chicken breast with salt, pepper, paprika, and garlic powder.
  4. Add the chicken to the pan and cook for about 6-7 minutes on each side, or until fully cooked.
  5. In a bowl, combine the BBQ sauce and honey, then pour it over the chicken in the pan. Stir until the chicken is coated and let it simmer for a few minutes to thicken the sauce.
  6. In serving bowls, layer the rice, black beans, corn, chopped lettuce, and then slice the BBQ chicken on top.
  7. Garnish each bowl with shredded cheddar, pickled onions, cilantro, and ranch dressing to taste.

Notes

Allow the chicken to rest a few minutes after cooking for better flavor.
Substitute brown rice for a healthier option if desired.
Feel free to add other toppings such as avocado or jalapeños for an extra kick.
