Ingredients
Scale
- 2 cups (248g) all-purpose flour
- 2 teaspoons baking powder
- ¾ teaspoon salt
- 1 cup (226g) unsalted butter, melted
- 1 ½ cups (300g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup (237ml) buttermilk
- 1 cup (225g) rainbow sprinkles
- 1 cup (226g) unsalted butter, softened
- 4 cups (452g) powdered sugar
- 1 teaspoon (15 ml) vanilla extract
- ½ teaspoon salt
- 2–5 tablespoons (30-75ml) heavy whipping cream
- ½ cup (112g) sprinkles plus more for topping
Instructions
- Preheat the oven to 350°F and prepare a 9×13-inch baking pan by greasing and flouring it.
- In a medium bowl, whisk together flour, baking powder, and salt, then set the mixture aside.
- In a large bowl, use a mixer to blend melted butter and sugar on medium speed until smooth. Add eggs one at a time, followed by the vanilla extract.
- Incorporate the buttermilk alternately with the dry mixture, mixing on medium-high speed, starting and finishing with buttermilk. Make sure to scrape the sides of the bowl during mixing, then fold in the sprinkles.
- Transfer the batter to the prepared pan and bake for 30-40 minutes, or until a toothpick comes out clean. Let it cool completely before frosting.
- For the frosting, beat softened butter until creamy. Gradually mix in the powdered sugar, one cup at a time, until a crumbly mixture forms. Then add vanilla and salt, followed by 2 tablespoons of heavy cream; mix until smooth, adjusting with more cream as necessary, and stir in sprinkles.
- Frost the cooled cake with the frosting and decorate with additional sprinkles. It's easiest to use an offset spatula for spreading. Store the cake loosely covered for up to 2 days.
- This recipe also makes 24 cupcakes, two 9-inch round cakes, or three 8-inch round cakes.
Notes
Ensure the butter is fully melted before combining with sugar for a smooth batter.
Allow the cake to cool completely before frosting to prevent the frosting from melting.
Feel free to customize the amount of sprinkles in the frosting and on top based on your preference.
