- 3/4 cup milk
- 2 tablespoons maple syrup
- 2 teaspoons vanilla extract
- 2 1/2 cups rolled oats

- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups diced apple
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with silicone liners or grease it if necessary.
- In a large mixing bowl, combine the wet ingredients: applesauce, milk, maple syrup, and vanilla extract. Stir well to blend.
- Add the dry ingredients: rolled oats, cinnamon, nutmeg, baking powder, and salt. Mix until everything is well incorporated. Fold in the diced apples.
- Using a large cookie scoop, fill 10 muffin tins with the batter, which will be slightly wet. Bake for 25-28 minutes or until the tops are golden brown.
- Allow to cool briefly before enjoying. Dust with a sprinkle of cinnamon if desired.
