Description

Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 cups diced granny smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 425°F. Line 6 wells of a muffin tin with paper liners, skipping every other well.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg until no lumps remain.
  3. Add 1.5 cups of diced Granny Smith apples to the dry mix and toss to coat them lightly with flour.
  4. In another bowl, whisk avocado oil, brown sugar, blended cottage cheese, eggs, and vanilla until smooth.
  5. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  6. Divide the batter among the 6 prepared muffin liners, filling each to the top.
  7. Mix topping brown sugar and cinnamon in a small bowl, sprinkle over muffins, and add remaining apple pieces on top.
  8. Bake at 425°F for 5 minutes, then reduce temperature to 350°F and bake for another 13-18 minutes until a toothpick comes out clean.
  9. Let the muffins cool in the tin for 5-10 minutes, then transfer to a wire rack.
  10. Optionally, drizzle a mixture of powdered sugar and milk over cooled muffins.

Notes

For a variation, try mixing in nuts or raisins along with the apples.
Ensure that your cottage cheese is blended until smooth for optimal texture in the muffins.
