Description

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt

  • Avocado oil or other high-heat oil, as needed
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard or add sriracha to taste for a spicy version
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • Lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles as needed
  • Hot honey for drizzling

Instructions

  1. Make the garlic aioli: In a small bowl, combine the mayonnaise, minced garlic, dijon mustard, and lemon juice. Mix until well combined, then cover and set aside.
  2. Prepare the Chicken: Pat the chicken breasts dry with paper towels. Preheat your grill to medium-high heat. In a small bowl, mix the garlic powder, paprika, and salt. Rub the chicken breasts with avocado oil and season on both sides with the spice mixture.
  3. Grill the Chicken: Place the seasoned chicken on the hot grill. Grill for 4-7 minutes on each side until the internal temperature reaches 165°F (74°C). Once cooked, transfer the chicken to a plate and allow it to rest.
  4. Prepare the Brioche Buns: While the chicken rests, slice the brioche buns in half and toast them lightly on the grill.
  5. Assemble the Sandwich: Spread a generous amount of garlic aioli on the bottom half of each toasted bun and place a grilled chicken breast on top.
  6. Layer the Goodness: Add sliced avocado, tomato slices, and lettuce on each chicken breast. Top with two slices of crispy bacon and, if desired, dill pickle slices.
  7. Drizzle with Hot Honey: Drizzle hot honey over each sandwich, adjusting the amount to your spice preference.
  8. Top with the Buns: Place the top half of the bun on each sandwich to complete the assembly.
