- 1 1/2 tablespoons coconut oil, melted
- 1 teaspoon cinnamon
- 1 teaspoon chipotle paste
- 1/2 teaspoon chili powder
- salt, to taste
- for topping – fresh cilantro
Instructions
- Preheat the grill to medium-high heat.
- Wash and peel the carrots thoroughly.
- In a small bowl, combine the melted coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub this mixture evenly over the carrots using your hands for best results.
- Place the seasoned carrots on the grill over indirect heat. Grill for 20-25 minutes, flipping and rotating them every 7-8 minutes. Cooking time may vary depending on the size of the carrots.
- Once done, transfer the grilled carrots to a serving platter. Garnish with fresh cilantro if desired and serve.
