- 4 cups confectioner's sugar

Instructions
- Preheat the oven to 350° F and line muffin pans with 18 liners.
- In a large bowl, cream the sugar and unsalted butter together until light and fluffy.
- Add the eggs one at a time, beating well after each addition to incorporate.
- Mix in the green food coloring and vanilla extract until combined.
- In a separate bowl, whisk together the all-purpose flour, salt, baking soda, and baking powder.
- Pour the buttermilk into the wet mixture and stir until combined.
- Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.
- Fill the lined muffin cups about ¾ full with batter.
- Bake in the preheated oven for approximately 17 minutes, or until a toothpick inserted in the center comes out clean.

You can adjust the green food coloring to achieve your desired shade.
