- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1 cup raisins
Instructions
- In a medium bowl, whisk together flour, cinnamon, baking soda, and salt. Stir in old-fashioned oats and set aside.
- In a large bowl, beat together softened butter, brown sugar, and sugar until well combined. Add in the egg and vanilla, mixing until fully combined, scraping down the sides of the bowl as needed.
- Mix in the dry ingredients until just combined, then fold in the raisins.
- Cover the cookie dough and refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Once the dough is chilled, place 1 1/2 tbsp size scoops of cookie dough on the prepared baking sheet, leaving space for spreading.
- Bake for 10-12 minutes.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool.
