  • 2 cups all purpose flour (plus more if needed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened slightly)
  • 3/4 cups sugar
  • 1 large egg
  • 3/4 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 16 ounces white chocolate
  • 1/3 cup light corn syrup (plus more if needed)
  • food coloring (flesh tone and other color for your grad caps)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a bowl, mix the flour, salt, and baking powder together and set aside.
  3. Cream the softened butter and sugar together until the mixture is light and fluffy.
  4. Stir in the egg, vanilla extract, and almond extract until well combined.
  5. Add the dry mixture to the wet ingredients, stirring just until combined. If the dough is sticky, incorporate a bit more flour.
  6. Roll out the cookie dough on a floured surface to about 1/8th inch thick.
  7. Cut out twelve 3-inch circles from the rolled dough.
  8. Use a diamond-shaped cookie cutter to cut out twelve grad caps.
  9. Cut a triangle-shaped notch out of each circle of dough using the same cutter for accuracy.
  10. Brush two long edges of each diamond-shaped piece and insert it into the notch of the circle.
  11. Press the seams together using your finger to secure them.
  12. Bake the cookies for 10-14 minutes until the edges are set and the tops look dry.
  13. Allow the cookies to cool completely before decorating the grad caps with modeling chocolate.

Notes

Ensure to soften the butter slightly before creaming with sugar for the best texture.
If you find the dough too sticky, just add flour a little at a time until manageable.
Different colors of modeling chocolate can be used to personalize the grad caps to match school colors.
