Description

This garlic scape pesto combines the fresh flavors of garlic scapes and basil with the richness of parmesan and nuts. It’s a versatile sauce perfect for pasta, sandwiches, or as a spread, making it a quick and easy treat for any meal.


Ingredients

Scale
  • 1 cup garlic scapes, chopped
  • ½ cup fresh basil
  • ⅓ cup parmesan cheese, grated
  • ⅓ cup walnuts or pine nuts, toasted
  • ½ cup olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Rinse the garlic scapes under cold water, pat dry, and trim tough ends before chopping into 1-2 inch pieces.
  2. Toast the walnuts or pine nuts in a dry skillet over medium heat for 3-4 minutes, stirring until golden and fragrant. Allow to cool slightly.
  3. In a food processor, combine the chopped garlic scapes, basil, toasted nuts, and parmesan cheese. Pulse until finely chopped but not overly smooth.
  4. With the processor running, drizzle in the olive oil and blend until reaching a smooth yet slightly textured consistency.
  5. Add lemon juice, salt, and black pepper, blending for another 10-15 seconds. Adjust seasoning as necessary by adding more salt, lemon juice, or olive oil as needed.
  6. If the pesto is too thick, mix in 1 to 2 tablespoons of olive oil or water until smooth and spreadable.
  7. Serve immediately with pasta, on sandwiches or flatbread, or store in an airtight container. For freshness, drizzle olive oil on top before storing.

Notes

Toast the nuts lightly for enhanced flavor.
Adjust the garlic and lemon according to your taste preferences.
Store leftover pesto in the fridge for up to a week.
