- 1 tablespoon cornstarch
- 1 ½ teaspoons baking powder
- 1 teaspoon fine sea salt
- ½ teaspoon baking soda
- 1 cup unsalted butter, room temperature
- 1 ¼ cups granulated sugar
- ¼ cup light brown sugar, firmly packed
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 1 ½ teaspoons vanilla extract
- ½ teaspoon almond extract
- ½ cup jimmies sprinkles
- ½ cup granulated sugar for rolling the cookie dough balls
Instructions
- Whisk together the all-purpose flour, cornstarch, baking powder, salt, and baking soda in a medium mixing bowl and set aside.
- In a large mixing bowl, beat the butter, granulated sugar, and light brown sugar together on medium speed for 3 to 4 minutes until fluffy, scraping the bowl as needed.
- Reduce the speed to low, add the egg and egg yolk, mixing thoroughly. Then, add the vanilla and almond extracts, mixing until incorporated.
- With the mixer on low, add the dry ingredients in increments, mixing until no flour streaks remain. Finally, add the jimmies and mix until well combined.
- Line a baking sheet or lidded container with parchment paper or a silicone mat.
- Scoop the cookie dough using a #40 scoop (two tablespoons), placing each ball on the prepared sheet. Chill the cookie sheet in the refrigerator for 2 hours or overnight.
Notes
For lighter cookies, use clear vanilla extract.
Make sure the butter is at room temperature for the best texture.
Chilling the dough helps the cookies maintain their shape while baking.
