  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat oven to 450 degrees Fahrenheit.
  • In a large skillet over medium heat, melt 2 tablespoons of butter.
  • Add chopped onions and cook for 3-4 minutes, stirring occasionally until they become translucent.
  • Transfer the cooked onions to a large mixing bowl and allow to cool for 2-3 minutes.
  • In the mixing bowl, combine blue cheese, panko breadcrumbs, salt, and pepper with the onions.
  • Gently mash the ingredient mixture together using a fork.
  • In the same skillet, melt the remaining 2 tablespoons of unsalted butter over high heat, ensuring the skillet is large enough for the steaks.
  • Season both sides of the filet mignon steaks with kosher salt and black pepper.
  • Sear the steaks in the hot skillet for 3 minutes on each side until nicely browned.
  • Top each steak with the blue cheese mixture, then transfer to the oven.
  • Bake for 4 minutes for rare or 5-6 minutes for medium doneness; adjust for well done if preferred.
  • Let the steaks rest for 10 minutes, covered with foil, before serving.

Let the steaks come to room temperature before searing for more even cooking.
