- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Preheat oven to 450 degrees Fahrenheit.
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add chopped onions and cook for 3-4 minutes, stirring occasionally until they become translucent.

- In the mixing bowl, combine blue cheese, panko breadcrumbs, salt, and pepper with the onions.
- Gently mash the ingredient mixture together using a fork.
- In the same skillet, melt the remaining 2 tablespoons of unsalted butter over high heat, ensuring the skillet is large enough for the steaks.
- Season both sides of the filet mignon steaks with kosher salt and black pepper.
- Sear the steaks in the hot skillet for 3 minutes on each side until nicely browned.
- Top each steak with the blue cheese mixture, then transfer to the oven.
- Bake for 4 minutes for rare or 5-6 minutes for medium doneness; adjust for well done if preferred.
- Let the steaks rest for 10 minutes, covered with foil, before serving.
