- ¼ cup caramelized onions, warmed
- 1 small handful arugula
- 2 brioche buns, split and lightly toasted
- ¾ cup mayonnaise
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 small garlic clove, lightly blanched or roasted, then mashed into a paste
- ½ teaspoon dijon mustard
- ½ teaspoon coarse sea salt
- ½ teaspoon black pepper
- 1–2 teaspoons chopped fresh parsley or chives (optional)
Instructions
- Whisk together mayonnaise, olive oil, lemon juice, and Dijon in a small bowl until smooth.
- Mix in garlic paste, salt, pepper, and herbs, adjusting seasoning to taste. Refrigerate for at least 1 hour.
- Divide ground beef into two equal portions and shape into patties, making a slight indentation in the center.
- Season patties with salt and pepper on both sides.
- Preheat grill to medium-high heat; oil grates if necessary.
- Grill burgers for 4-5 minutes per side until cooked to desired doneness (130-135°F for medium rare).
- Toast buns cut-side down on the grill during the last minute of cooking.
- Spread 1-2 teaspoons of lemon garlic aioli on the bottom buns.
- Layer arugula, then the grilled burger patty on top.
- Add goat cheese, fig jam, caramelized onions, and bacon on each patty before finishing with the top bun.
