- 2 large apples, cored and sliced (granny smith or honeycrisp work well)
- 1 medium onion, sliced
- 1 cup apple juice or apple cider
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch (optional, for thickening)
- 1 tablespoon water (optional, for thickening)
Instructions
- Season the pork chops on both sides with salt and pepper.
- Spread the sliced apples and onions evenly across the bottom of the slow cooker.
- Arrange the pork chops on top of the apple and onion layer.
- In a small bowl, whisk together the apple juice, brown sugar, and cinnamon, then pour the mixture over the pork chops.
- Cover and cook on low for 6 hours or high for 3 hours, until the pork is tender and cooked through.
- Optional: For a thicker sauce, transfer the pork chops to a plate. Stir the cornstarch and water together and mix it into the cooking liquid. Cover and cook on high for about 5 minutes, or until thickened.
- Serve the pork chops with the apples and onions spooned over the top, using the sauce as desired.
