Description

Ingredients

  • ¼ cup granulated sugar
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter, cut into tablespoons, very cold
  • 2 large egg yolks, cold
  • 5 tablespoons ice water
  • 350 g hulled strawberries
  • ¼ cup granulated sugar
  • 1 ½ tablespoon cornstarch
  • pinch kosher salt
  • 1 large egg
  • 1 teaspoon water
  • 1 pinch kosher salt
  • turbinado sugar, as needed

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. Cut in the cold butter using a pastry blender or two forks until the mixture resembles coarse, pebbled sand.
  3. Add egg yolks and ice water, mixing with a spatula until the mixture resembles a shaggy mess.
  4. Transfer the mixture onto a clean surface and knead gently until a cohesive dough forms. Do not over-knead.
  5. Divide the dough into two equal portions, flatten into disks, wrap in plastic, and chill for at least 30 minutes. The dough can be stored in the refrigerator for up to 2 days.
  6. This recipe yields two pie doughs; use one and freeze the other for later.

Notes

Ensure the butter is very cold for a flaky texture.
Chilling the dough is crucial for the best results.
Feel free to use other fruits in place of strawberries for a different flavor.
