Description

Ingredients

  • 1 English cucumber
  • 1 teaspoon kosher salt
  • 12 ounces Campari tomatoes
  • 1/4 small red onion
  • 3 tablespoons champagne vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/3 cup chopped fresh dill
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Slice the cucumber lengthwise and remove the seeds. Discard the seeds and cut the cucumber into thick half-moons. Place in a large bowl and sprinkle with 1/2 teaspoon kosher salt, letting it sit for 5 minutes to release moisture.
  2. After 5 minutes, discard any excess cucumber water.
  3. Cut the tomatoes into thick wedges and add to the cucumber along with the sliced red onion.
  4. Drizzle with vinegar, olive oil, honey, remaining kosher salt, and black pepper. Toss well to combine.
  5. Sprinkle with chopped dill and toss again. Serve chilled or at room temperature.

Notes

For extra flavor, allow the salad to marinate for 30 minutes before serving.
This salad can be enjoyed as a side dish or as a light main course with some protein added.
