- ½ pound (8 ounces) penne pasta
- 3 tablespoons butter
- 1/2 tablespoon flour
- 2 cloves garlic, minced
- 2 cups corn, fresh or frozen
- 2/3 cup heavy cream
- 1 tablespoon lemon juice, freshly squeezed
- 1/2 cup parmesan cheese, freshly grated
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1/4 cup fresh basil
Instructions
- Bring a large pot of salted water to a boil and add the pasta. Cook until al dente, about 8–10 minutes or according to package directions. Reserve ½ cup pasta water, drain, and set aside.
- Melt the butter in a large skillet over medium heat. Whisk in the flour and cook for about 1 minute to eliminate any raw flavor.
- Add minced garlic and corn to the skillet, cooking for 2 minutes until fragrant and slightly softened.
- Pour in the heavy cream, lemon juice, and reserved pasta water. Stir constantly over medium heat for about 1 minute until the mixture is smooth and slightly thickened. Mix in Parmesan cheese until melted, adding more pasta water for a looser sauce if desired.
- Season the sauce with salt and pepper. Toss in the drained pasta and fresh basil until everything is well coated.
- Top with extra Parmesan and fresh basil, if desired. Serve warm.
Notes
For added flavor, consider using fresh corn when in season.
You can substitute heavy cream with half and half if desired for a lighter option.
Add cooked chicken or shrimp for additional protein and flavor.
