- 2 (15-ounce) cans black beans, drained and rinsed
- 1 (15-ounce) can black-eyed peas, drained and rinsed
- 1 large red bell pepper, seeded and diced
- 1 large yellow bell pepper, seeded and diced
- 2 fresh jalapeños, seeded and diced
- 1 ½ cups frozen corn kernels, thawed and drained
- ½ cup finely diced red onion
- ½ cup finely chopped fresh cilantro
- 1 cup fresh seeded and diced tomato, optional
- 2 fresh avocados, diced and added just before serving, optional
- ¼ cup red wine vinegar
- 2 heaping tablespoons honey
- 1 fresh lime, juiced
- 1 tablespoon fine sea salt
- 2 chipotles in adobo plus 2 teaspoons sauce from the can
- 1 cup avocado or vegetable oil
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
Instructions
- Combine black beans, black-eyed peas, bell peppers, jalapeños, corn, onion, cilantro, and tomatoes in a large bowl.
- In a blender, mix red wine vinegar, honey, lime juice, salt, chipotles, and sauce until smooth. While blending on low, slowly add the oil until emulsified. Stir in oregano and black pepper, adjusting the seasoning as needed.
- Pour half of the dressing over the bean and vegetable mixture, stirring to combine. Cover and refrigerate for at least 3 hours before serving.
- Before serving, stir the cowboy caviar and add more dressing if desired; fold in fresh avocado if using.
- Serve with tortilla chips or as a topping for tacos.
Notes
For extra zest, add more lime juice or vinegar to the dressing.
