Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix the dry cake mix, melted butter, eggs, and optional extracts until a thick dough forms.
- Gently fold in rainbow sprinkles, being careful not to over-mix. The dough will be sticky.
- Allow the dough to rest uncovered for about 5 minutes to thicken.
- Use a medium cookie scoop to portion out the dough.
- Roll each cookie ball in additional sprinkles, pressing gently to adhere.
- Place on prepared baking sheets, spaced about 3 inches apart, and bake for 10-12 minutes until edges are set but centers look slightly underdone.
