Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ cup all-purpose flour
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, thinly sliced
  • 2 teaspoons garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup heavy cream
  • ½ teaspoon Worcestershire sauce
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pound thick chicken breasts to about ½ to ¾ inch thickness for even cooking or slice large ones in half horizontally.
  2. Season both sides of the chicken with salt, pepper, paprika, garlic powder, and onion powder.
  3. In a shallow bowl, place the flour and lightly dredge the chicken, shaking off any excess flour.
  4. Heat oil in a large skillet over medium heat. Cook the chicken for 4 to 5 minutes per side, until golden brown. The chicken does not need to be fully cooked at this stage. Transfer to a plate and set aside.

Notes

Pounding the chicken ensures even cooking and tenderness.
Feel free to use milk instead of heavy cream for a lighter sauce.
Garnish with fresh parsley for a pop of color and flavor.
