Description

These Easy Caramel Apple Empanadas combine crispy pie crust with creamy filling, apple slices, and a delicious caramel glaze. Perfect for a simple treat at home, these empanadas bring together familiar flavors in an irresistible way that everyone will love!


Ingredients

  • 2 boxes refrigerated pie crust 14.1 ounce each
  • 1 can apple pie filling 20 ounce
  • 1 package cream cheese, softened 8 ounce
  • â…” cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg separated
  • 2 ½ cups powdered sugar
  • ¼ cup caramel ice cream topping
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 425°F and bring the pie crusts to room temperature.
  2. Separate the egg white from the egg yolk into two small bowls and whisk each separately. Set aside.
  3. Chop the apple slices in the apple pie filling into small pieces.
  4. In a mixing bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  5. Roll out the pie crusts and cut into 4-inch circles using a biscuit cutter, re-rolling scraps as needed.
  6. Place half a scoop of apple pie filling and half a scoop of cheesecake filling in the center of each circle, brushing the edges with whisked egg white.
  7. Fold the crust over to create empanadas and seal the edges by pinching or using a fork. Place on a parchment-lined baking sheet.
  8. Prick each empanada with a fork and brush the tops with whisked egg yolk before baking.
  9. Bake for about 15 minutes or until golden brown, then cool on a wire rack.
  10. Make the glaze by whisking together powdered sugar, caramel topping, and milk to desired consistency. For a thicker glaze, use less milk.
  11. Dip cooled empanadas in the caramel glaze and let set on the parchment-lined baking sheet.

Notes

Ensure the pie crusts are at room temperature for easier handling.
For best results, use a biscuit cutter to ensure even rounds of dough.
