Description

This Easy Black Bean Dip blends delicious black beans with jalapeño and spices, creating a flavorful, creamy dip that pairs perfectly with chips. Ideal for parties or a quick snack!


Ingredients

  • 2 tablespoons olive oil
  • 1 medium red onion chopped small
  • 4 cloves garlic minced
  • 2 jalapeño peppers seeded and chopped
  • 2 (15-ounce) cans black beans drained and rinsed
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt or to taste
  • 3 tablespoons fresh lime juice
  • 1/4 cup chopped cilantro plus more for serving
  • vegan cheese optional
  • pickled red onions optional

Instructions

  1. In a small pan, warm the olive oil over medium heat.
  2. Add the chopped red onion, garlic, and jalapeño peppers and sauté for about 5-8 minutes, stirring frequently.
  3. Remove from heat.
  4. Add the drained and rinsed beans to a food processor along with the cooked onion, garlic, peppers, cumin, salt, lime juice, and cilantro.
  5. Process until fairly smooth, but you can leave some texture if you like.
  6. Transfer to a serving dish and sprinkle with additional cilantro, vegan cheese, and pickled red onions if desired.
  7. Serve with tortilla chips and enjoy!

Notes

Adjust the lime juice and salt to taste for a personalized flavor.
Try substituting black beans with pinto beans for a different taste.
Keep leftovers in the refrigerator for up to 3 days.
