Description

These delightful Easter Sugar Cookies bring joy with their sweetness and vibrant royal icing. Perfect for any spring celebration, they are easy to make and irresistibly tasty!


Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 3 cups confectioners' sugar
  • 2 tablespoons meringue powder
  • 1/4 cup room temperature water
  • 1/2 teaspoon vanilla extract
  • gel food colouring

Instructions

  1. In a mixing bowl, cream together butter and sugar using a hand mixer on medium speed until fluffy (about 2 minutes). Add egg and vanilla, mixing until well combined.
  2. Lower the speed and add baking powder and salt, followed by the flour. Mix until combined.
  3. Wrap the dough in plastic wrap and freeze for 30 minutes or refrigerate until firm (at least 1 hour or overnight).
  4. Preheat the oven to 350°F and line a baking sheet with parchment paper or a silicone mat.
  5. Let the dough sit for 5-10 minutes at room temperature, then roll it out to 1/4-inch thickness on a floured surface. Cut with an egg-shaped cookie cutter.
  6. Place cookies on the lined baking sheet, spaced an inch apart. Re-roll scraps and cut additional cookies.
  7. Bake for 8-10 minutes, until edges are golden brown. Allow to cool on the baking sheet for a couple of minutes before transferring to a wire rack.

Notes

Ensure the butter is softened for easier mixing and better texture.
Use a rolling pin with guides for an even dough thickness.
Decorate the cooled cookies with royal icing for a festive touch.
