- 1/2 cup unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 3 cups confectioners' sugar
- 2 tablespoons meringue powder
- 1/4 cup room temperature water
- 1/2 teaspoon vanilla extract
- gel food colouring
Instructions
- In a mixing bowl, cream together butter and sugar using a hand mixer on medium speed until fluffy (about 2 minutes). Add egg and vanilla, mixing until well combined.
- Lower the speed and add baking powder and salt, followed by the flour. Mix until combined.
- Wrap the dough in plastic wrap and freeze for 30 minutes or refrigerate until firm (at least 1 hour or overnight).
- Preheat the oven to 350°F and line a baking sheet with parchment paper or a silicone mat.
- Let the dough sit for 5-10 minutes at room temperature, then roll it out to 1/4-inch thickness on a floured surface. Cut with an egg-shaped cookie cutter.
- Place cookies on the lined baking sheet, spaced an inch apart. Re-roll scraps and cut additional cookies.
- Bake for 8-10 minutes, until edges are golden brown. Allow to cool on the baking sheet for a couple of minutes before transferring to a wire rack.
Notes
Ensure the butter is softened for easier mixing and better texture.
Use a rolling pin with guides for an even dough thickness.
Decorate the cooled cookies with royal icing for a festive touch.
