- 3 bell peppers (green, yellow, and red, sliced into strips)
- 1 large yellow onion (sliced)
- 4 cloves garlic (minced)
- 1 ½ pounds boneless skinless chicken breasts
- 1 (1.25-ounce) packet fajita seasoning mix
- ½ teaspoon black pepper
- 2 tablespoons fresh lime juice (1 lime)
- Soft shell fajita tortillas (warmed, optional for serving)
- Fresh chopped cilantro (optional for serving)
- Sour cream (optional for serving)
Instructions
- Combine the diced tomatoes, bell peppers, onion, garlic, and chicken in a slow cooker.
- Sprinkle the fajita seasoning and black pepper over the chicken, then add the lime juice.
- Cover the slow cooker and cook on low for 6–8 hours or high for about 4 hours until the chicken is cooked through and tender.
- Remove the chicken from the cooker and shred it with two forks, then return it to the slow cooker and stir to combine with the juices and vegetables.
- Serve the mixture in warmed tortillas and top with fresh cilantro and sour cream if desired.
Notes
For added flavor, marinate the chicken for 1-2 hours before cooking.
To make this dish spicier, consider using hot diced tomatoes or adding jalapeños.
