Description

Crockpot Chicken Fajitas are a flavorful and easy meal made with tender chicken, vibrant bell peppers, and zesty spices. Perfect for quick dinners and satisfying every appetite!


Ingredients

  • 1 (10-ounce) can mild diced tomatoes with green chiles
  • 3 bell peppers (green, yellow, and red, sliced into strips)
  • 1 large yellow onion (sliced)
  • 4 cloves garlic (minced)
  • 1 ½ pounds boneless skinless chicken breasts
  • 1 (1.25-ounce) packet fajita seasoning mix
  • ½ teaspoon black pepper
  • 2 tablespoons fresh lime juice (1 lime)
  • Soft shell fajita tortillas (warmed, optional for serving)
  • Fresh chopped cilantro (optional for serving)
  • Sour cream (optional for serving)

Instructions

  1. Combine the diced tomatoes, bell peppers, onion, garlic, and chicken in a slow cooker.
  2. Sprinkle the fajita seasoning and black pepper over the chicken, then add the lime juice.
  3. Cover the slow cooker and cook on low for 6–8 hours or high for about 4 hours until the chicken is cooked through and tender.
  4. Remove the chicken from the cooker and shred it with two forks, then return it to the slow cooker and stir to combine with the juices and vegetables.
  5. Serve the mixture in warmed tortillas and top with fresh cilantro and sour cream if desired.

Notes

For added flavor, marinate the chicken for 1-2 hours before cooking.
To make this dish spicier, consider using hot diced tomatoes or adding jalapeños.
