Description

Ingredients

  • 1 pound dried navy beans
  • 5 cups water
  • 1 medium yellow onion, diced
  • 1/2 cup brown sugar
  • 1/3 cup molasses
  • 1/3 cup apple cider vinegar
  • 6 ounces tomato paste
  • 2 tablespoons yellow mustard
  • 1 teaspoon pepper
  • 5 strips thick cut bacon, cooked until crisp and cut into small pieces
  • 3 teaspoons salt

Instructions

  1. Rinse the dried beans in a colander and remove any damaged or broken beans.
  2. In a crock pot, combine the rinsed beans, water, diced onion, brown sugar, molasses, apple cider vinegar, tomato paste, yellow mustard, and pepper.
  3. Set the crockpot to high for 9-10 hours. If the beans are presoaked, cook on low for 8-10 hours or high for 4-6 hours.
  4. In the last hour of cooking, add the cooked bacon and salt, stirring to combine.

Notes

You can soak the beans beforehand for a shorter cooking time.
Adjust the sweetness by modifying the amount of brown sugar.
Feel free to add additional spices for extra flavor.
