- 4 cabbage steaks
- 1/3 cup olive oil
- 1 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. smoked paprika
- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Wash and slice the cabbage in half vertically, then cut 'steaks' approximately 1 inch thick from one of the halves.
- In a bowl, mix olive oil, 1/3 cup of grated Parmesan, minced garlic, salt, pepper, and smoked paprika.
- Brush both sides of the cabbage steaks with the oil mixture.
- Place piles of the remaining Parmesan on the baking sheet, one for each steak.
- Position each cabbage steak onto its cheese bed on the baking sheet.
- Roast for 20-25 minutes, until the cheese is golden and crispy.
- Drizzle with balsamic vinegar and sprinkle with fresh parsley before serving.
Notes
Choose a firm, fresh cabbage for the best texture.
Adjust the seasoning to taste for more flavor if desired.
