Description

Enjoy a delightful bowl of Creamy Chicken Alfredo, featuring tender chicken, fettuccine, and a rich creamy sauce that comes together in just 30 minutes. This dish is a quick and satisfying meal, perfect for busy weeknights or a cozy dinner at home.


Ingredients

  • 200 g / 7oz chicken breast, cut in half horizontally
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 250 g / 8 oz fettuccine
  • 2 cups milk, any fat %
  • 1 1/2 cups chicken stock / broth
  • 1 large garlic clove, minced
  • 1/2 cup thickened / heavy cream
  • 3/4 cup freshly grated parmesan cheese
  • Parsley, for garnish

Instructions

  1. Season both sides of the chicken with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken to the skillet and cook for 2 minutes on each side until golden and fully cooked. Once cooked, remove it from the skillet and let it rest for 5 minutes before slicing.
  4. In the same skillet, combine milk, chicken stock, and minced garlic. Bring the mixture to a simmer, then add the fettuccine.
  5. Stir the pasta every 30 seconds until softened, about 3 minutes. Once softened, reduce the heat to medium and stir occasionally for a couple more minutes.
  6. After about 9-10 minutes, the pasta should be nearly cooked, and there should still be liquid in the skillet. Stir in the cream and parmesan cheese until mixed well.
  7. Allow the sauce to simmer for about 2 minutes, stirring occasionally until thickened. If the sauce becomes too thick, add a splash of hot tap water and toss to bring it back to a silky consistency.
  8. Adjust salt and pepper if necessary and serve immediately, topped with more parmesan and parsley.

Notes

Ensure not to overcook the pasta as it will continue to cook in the sauce.
Feel free to substitute the fettuccine with another pasta type if preferred.
Use freshly grated parmesan for the best flavor.
