Description

This Cowboy Chicken is a delightful blend of flavors with tender chicken, zesty spices, and a savory mixture of beans and corn. Perfect for a quick dinner or a weeknight family meal!

Ingredients

Scale
  • 4 chicken cutlets or 2 chicken breasts cut horizontally
  • 1½ teaspoons smoked paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 small yellow onion diced
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (15.25 ounce) can corn kernels or southwest corn, drained
  • 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes, drained
  • 2 tablespoons fresh lime juice juice from 1 lime
  • ¼ cup barbecue sauce any variety
  • ¾ cup shredded mexican cheese blend
  • chopped fresh cilantro, jalapeños, and avocado for serving

Instructions

  1. Preheat the oven to broil (500°F) and set the rack 6 inches below the broiler.
  2. In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, and black pepper. Reserve 1½ teaspoons for cowboy caviar.
  3. Season both sides of the chicken cutlets with the spice mixture.
  4. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the chicken for 3-4 minutes on each side until fully cooked (165℉). Remove and set aside.
  5. Lower the heat to medium and add the remaining tablespoon of olive oil. Cook the diced onion for about 4-5 minutes until tender.
  6. Stir in the black beans, corn, diced tomatoes, reserved spice mix, and lime juice. Cook until heated through, around 4-5 minutes.
  7. Place the chicken back into the skillet, brush with barbecue sauce, and sprinkle the shredded cheese on top.
  8. Broil for 2-3 minutes until the cheese is melted and bubbly.
  9. Serve with sliced jalapeños, chopped cilantro, and avocado.

Notes

This dish pairs well with rice or tortillas for a fulfilling meal.
For extra spice, add more jalapeños or use a spicy barbecue sauce.
You can substitute the black beans and corn with your favorite veggies.
