Ingredients

  • 1 1/2 cups cottage cheese
  • 3 cups frozen strawberries
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 cup cottage cheese
  • 3 cups frozen banana slices
  • 3 tablespoons honey
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Blend 1 1/2 cups of cottage cheese in a food processor until smooth and creamy, about 1 minute.
  2. For the strawberry flavor, add 3 cups of frozen strawberries, 3 tablespoons of honey, and 1 tablespoon of lemon juice to the processed cottage cheese and blend until creamy, 3 to 4 minutes.
  3. For the banana flavor, use 3 cups of frozen banana slices, 3 tablespoons of honey, and 1 1/2 teaspoons of vanilla extract; blend until creamy, 3 to 4 minutes.
  4. Serve immediately or store in an airtight container in the freezer for up to 1 month. Allow to sit at room temperature for 5-10 minutes before scooping.

Notes

For different flavors, try adding cocoa powder or crushed nuts to the basic mixture.
This ice cream can be made in advance for a sweet treat anytime, just ensure it’s stored properly.
Ensure the cottage cheese is well-blended for a smooth texture. Avoid large lumps.
