- 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)
Instructions
- Preheat your oven to 350°F and prepare an 8×8-inch baking dish by lining it with parchment paper or greasing it.
- Blend the cottage cheese until it reaches a smooth, thick yogurt-like consistency, then set aside.
- In a large mixing bowl, whisk together the eggs, vanilla extract, coconut sugar, and maple syrup until combined. Stir in the blended cottage cheese.
- Add the almond flour, cacao powder, and baking soda into the mixture and stir until a smooth brownie batter forms.
- Gently fold in the chocolate chips, reserving a few to sprinkle on top later for an extra chocolatey finish.
- Pour the batter into the prepared baking dish, spread it evenly, and sprinkle the remaining chocolate chips on top.
- Bake for 24–26 minutes, or until a toothpick inserted comes out mostly clean with a few moist crumbs for a fudgy texture.
- Allow the brownies to cool in the pan for 15–20 minutes before slicing, as they will set while cooling.
Notes
For a richer flavor, use dark chocolate chips instead of semi-sweet.
