Description

These Cottage Cheese Brownies are a delicious twist on traditional brownies, packed with protein and flavor. With a simple prep and wholesome ingredients like cottage cheese, almond flour, and cocoa, these fudgy treats make for a perfect dessert or snack for health-conscious food lovers.

Ingredients

Scale
  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish by lining it with parchment paper or greasing it.
  2. Blend the cottage cheese until it reaches a smooth, thick yogurt-like consistency, then set aside.
  3. In a large mixing bowl, whisk together the eggs, vanilla extract, coconut sugar, and maple syrup until combined. Stir in the blended cottage cheese.
  4. Add the almond flour, cacao powder, and baking soda into the mixture and stir until a smooth brownie batter forms.
  5. Gently fold in the chocolate chips, reserving a few to sprinkle on top later for an extra chocolatey finish.
  6. Pour the batter into the prepared baking dish, spread it evenly, and sprinkle the remaining chocolate chips on top.
  7. Bake for 24–26 minutes, or until a toothpick inserted comes out mostly clean with a few moist crumbs for a fudgy texture.
  8. Allow the brownies to cool in the pan for 15–20 minutes before slicing, as they will set while cooling.

Notes

For a richer flavor, use dark chocolate chips instead of semi-sweet.
Store any leftovers in an airtight container at room temperature for up to 3 days.
For a gluten-free option, ensure that your almond flour is certified gluten-free.
