- 4 cups water
- 2 cinnamon sticks
- 2 cups milk, dairy or dairy-free milk
- ⅓ cup maple syrup, or other sweetener
- 1 teaspoon vanilla extract
Instructions
- Combine the rice, water, and cinnamon sticks in a high-powered blender. Blend for 40 to 60 seconds until ground.
- Transfer the mixture to a large container, cover, and refrigerate for 8 to 12 hours, ideally overnight.
- Strain the mixture through a nut-milk bag into a pitcher to remove the solids.
- Mix in the milk, vanilla extract, and maple syrup. Adjust sweetness to taste by adding more sweetener if desired.
- Serve over ice and garnish with freshly ground cinnamon or additional cinnamon sticks.
Notes
For a creamier texture, use coconut milk or almond milk.
