Description

Enjoy a delightful Chinese Chicken Salad bursting with flavor. This quick and healthy dish features tender chicken, fresh veggies, and a tangy vinaigrette, making it the ideal choice for a healthy meal or a satisfying dinner.


Ingredients

Scale
  • 1/2 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/4 cup sesame oil
  • 2 tbsp honey
  • 1 tbsp fresh ginger, grated
  • 2 cups cooked chicken, shredded
  • 4 cups mixed greens
  • 1 cup shredded carrots
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup green onions, sliced
  • 1/4 cup slivered almonds
  • 1/4 cup crispy chow mein noodles

Instructions

  1. Combine all of the ingredients for the vinaigrette in a jar with a lid or in a bowl. Shake or whisk until well combined. Refrigerate until ready to serve.
  2. In a large bowl, combine all of the salad ingredients.
  3. Pour the vinaigrette over the salad, a little at a time, tossing it together until it's dressed to your liking. Serve immediately.

Notes

Feel free to add additional vegetables such as carrots or snap peas for extra crunch.
This salad can be made ahead of time; just keep the vinaigrette separate until ready to serve.
