Description

Enjoy the delightful flavors of Chili Lime Roasted Cauliflower. This dish features perfectly roasted florets enhanced by zesty lime juice and chipotle powder, making it a fantastic addition to any quick dinner or healthy meal plan.


Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 2 garlic cloves, minced
  • 2.5 tbsp extra virgin olive oil
  • 1.5 tsp chipotle powder (more or less for spiciness!)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lime juice (1 medium to large lime)
  • 1 tbsp coriander/cilantro leaves, finely chopped (optional, sub parsley or chives)

Instructions

  • Preheat the oven to 200°C/390°F.
  • In a large bowl, combine the cauliflower florets with olive oil and minced garlic. Use your hands to mix and coat the cauliflower well.
  • Sprinkle the chipotle powder, salt, and black pepper over the cauliflower and toss to ensure even distribution.
  • Spread the seasoned cauliflower on a baking tray. Bake for 25 minutes, tossing once halfway through, until the edges are caramelized and the cauliflower is tender.
  • Once done, remove from the oven. Drizzle lime juice over the roasted cauliflower and mix gently.
  • Garnish with finely chopped coriander or parsley if desired, and serve hot.

Notes

Feel free to adjust the amount of chipotle powder based on your spice preference.
This dish works well as a side or a main vegetarian dish.
Leftovers can be stored in the fridge for up to 3 days.
