Description

These Chicken Pineapple Kebabs are an ideal blend of savory and sweet, featuring marinated chicken paired with juicy pineapple and colorful veggies. Perfect for a quick dinner or outdoor grilling, they are sure to satisfy your taste buds while being straightforward to prepare.


Ingredients

  • ⅓ cup soy sauce
  • ⅓ cup canned pineapple juice
  • 2 tablespoons lime juice
  • ¼ cup packed light brown sugar
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons sesame oil
  • 2 teaspoons chipotle chili pepper powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pound boneless skinless chicken breast, cut into chunks
  • 1 pineapple, cut into large chunks
  • 3 bell peppers (red, orange, yellow), cut into large pieces
  • 1 large red onion, cut into large pieces
  • fresh chopped cilantro, optional for garnish
  • lime wedges, optional for garnish

Instructions

  1. Whisk together soy sauce, pineapple juice, lime juice, brown sugar, olive oil, sesame oil, chipotle chili powder, garlic powder, salt, and pepper in a medium bowl.
  2. Add the chicken to the marinade, cover it, and refrigerate for at least 30 minutes, or overnight for enhanced flavor.
  3. Preheat the grill or oven to 400°F.
  4. Thread the marinated chicken, pineapple, peppers, and onions onto skewers and place them on a large plate or platter.
  5. Cook the kebabs by grilling for 15–20 minutes or baking in the oven for 15–20 minutes, turning them every 5 minutes until the chicken is cooked through and reaches 165°F.
  6. Serve with chopped cilantro and lime wedges, as desired.

Notes

For more intensity in flavor, marinate the chicken longer than 30 minutes.
Feel free to use any combination of vegetables you prefer for skewering.
Make it a complete meal by serving the kebabs over rice or with a side salad.
