Description

This Chicken Parmesan delivers irresistible flavor with a simple prep. Featuring crispy breaded chicken, rich marinara sauce, and gooey cheese, it’s the perfect homemade comfort food for a quick dinner.


Ingredients

  • 4 pieces boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1.5 cups seasoned italian breadcrumbs
  • 0.5 cup grated parmesan cheese
  • 1.5 cups vegetable oil for frying
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 0.25 cup parmesan cheese, grated, for topping
  • 2 tablespoons fresh basil, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Set up three shallow bowls: one with flour, another with beaten eggs, and the last with a mixture of breadcrumbs and 1/2 cup Parmesan cheese.
  3. Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, then coat thoroughly with the breadcrumb-Parmesan mixture, pressing gently for better adherence.
  4. In a large skillet, heat the vegetable oil over medium-high heat. Fry the chicken until golden brown, about 3–4 minutes per side. Drain on paper towels afterwards.
  5. Spread a thin layer of marinara sauce over the baking sheet. Place the fried chicken on top and spoon 2–3 tablespoons of marinara over each cutlet. Top with shredded mozzarella and sprinkle with Parmesan cheese.
  6. Bake for 20–25 minutes until the cheese is melted, bubbly, and slightly browned. Chicken should reach an internal temperature of 165°F (74°C).
  7. Remove from the oven and let it rest for 5 minutes. Garnish with fresh basil before serving.

Notes

For added flavor, consider using homemade marinara sauce if time allows.
Aged Parmesan cheese provides the best flavor profile for this dish.
Ensure the oil is hot enough before frying to achieve that desired crispiness.
