- 8 chicken thighs
- 6 cloves garlic
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup brown sugar
- 1/2 cup green olives (pitted or non-pitted)
- 1/2 cup pitted prunes
- 2 tablespoons capers
- salt to taste
- 1 cup white wine
- fresh parsley (for garnish)
Instructions
- Peel and chop the garlic cloves, or use a mini food processor.
- In a large glass or ceramic mixing bowl, mix the chopped garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add the green olives, pitted prunes, capers, and a good pinch of salt to the bowl.
- Incorporate the chicken thighs, ensuring they are all well coated with the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 3 hours or overnight.
- Preheat the oven to 180C/350F.
- Arrange the chicken and all marinade ingredients on a large baking pan, or distribute between two smaller pans to avoid overcrowding.
- Pour the white wine around the chicken without directly hitting it to maintain crispy skin.
- Roast in the oven for 50 minutes to 1 hour until the chicken is fully cooked and golden, ensuring it reaches an internal temperature of 74C/165F.
- Sprinkle with chopped parsley before serving.
