- 1–1/4 cups light corn syrup
- 1 cup granulated sugar
- 1–1/4 cups creamy peanut butter, not natural-style/drippy peanut butter
- 1 teaspoon vanilla extract
- 6 cups gluten free crispy rice cereal
- 1 cup gluten free dark or semi-sweet chocolate chips
- 1 cup gluten free butterscotch chips
- Flaky/coarse sea salt, for finishing, optional
Instructions
- Prepare a 9×13” baking pan with nonstick spray and set aside.
- In a large pot, combine corn syrup and sugar over medium-low heat, stirring constantly until the mixture simmers slightly; then remove from heat.
- Stir in peanut butter and vanilla extract until the mixture is smooth.
- Fold in crispy rice cereal until evenly coated with the mixture. Press into the prepared pan gently with wax paper or a measuring cup.
- Melt chocolate and butterscotch chips together in a glass bowl in the microwave in short increments, stirring until smooth.
- Drizzle the melted chocolate mixture over the bars and spread evenly with a spatula. Optionally sprinkle with sea salt.
- Allow the Scotcheroos to cool completely before slicing into 24 bars. Store in a covered container for up to 5 days.
Notes
Let the mixture cool slightly before slicing for cleaner cuts.
These bars can be stored at room temperature for up to 5 days.
For a different flavor, try adding a sprinkle of nuts or a dash of sea salt on top.
