Description

Ingredients

  • 11/4 cups light corn syrup
  • 1 cup granulated sugar
  • 11/4 cups creamy peanut butter, not natural-style/drippy peanut butter
  • 1 teaspoon vanilla extract
  • 6 cups gluten free crispy rice cereal
  • 1 cup gluten free dark or semi-sweet chocolate chips
  • 1 cup gluten free butterscotch chips
  • Flaky/coarse sea salt, for finishing, optional

Instructions

  1. Prepare a 9×13” baking pan with nonstick spray and set aside.
  2. In a large pot, combine corn syrup and sugar over medium-low heat, stirring constantly until the mixture simmers slightly; then remove from heat.
  3. Stir in peanut butter and vanilla extract until the mixture is smooth.
  4. Fold in crispy rice cereal until evenly coated with the mixture. Press into the prepared pan gently with wax paper or a measuring cup.
  5. Melt chocolate and butterscotch chips together in a glass bowl in the microwave in short increments, stirring until smooth.
  6. Drizzle the melted chocolate mixture over the bars and spread evenly with a spatula. Optionally sprinkle with sea salt.
  7. Allow the Scotcheroos to cool completely before slicing into 24 bars. Store in a covered container for up to 5 days.

Notes

Let the mixture cool slightly before slicing for cleaner cuts.
These bars can be stored at room temperature for up to 5 days.
For a different flavor, try adding a sprinkle of nuts or a dash of sea salt on top.
