This Cheesy Ground Beef Zucchini Skillet combines the savory taste of lean ground beef, fresh zucchini, and gooey mozzarella cheese for a delightful quick dinner.

- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 tablespoon worcestershire sauce
- 1 teaspoon italian seasoning
- 1 teaspoon beef better than bouillon
- ½ teaspoon crushed red pepper flakes, optional
- 1 (14.5 oz) can petite fire roasted tomatoes
- 3–4 small zucchini, cut into quarter pieces
- 1 cup shredded mozzarella cheese
Instructions
- In a large skillet over medium heat, brown the ground beef with the onion, breaking it apart until no longer pink. Drain excess grease if necessary.
- Add garlic, Worcestershire sauce, Italian seasoning, beef bouillon, red pepper flakes, and undrained tomatoes. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Stir in the zucchini and continue to simmer for another 10 minutes until the zucchini starts to soften.
- Sprinkle shredded mozzarella on top, reduce heat to low, and cover for 3-5 minutes until cheese has melted. Serve immediately.
Notes
Feel free to substitute ground turkey for the ground beef for a healthier option.
Add more vegetables like bell peppers or mushrooms for extra flavor and nutrition.
