Description

  • 3 cups medium shells uncooked
  • 3 tablespoons butter
  • 1 onion finely diced
  • ⅓ cup diced red bell pepper
  • 1 teaspoon chili powder
  • ½ teaspoon seasoned salt
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1⅓ cups milk
  • 3 cups shredded sharp cheddar cheese divided
  • ⅓ cup shredded parmesan cheese
  • 3 cups cooked chopped chicken
  • 4 ounces canned mild green chiles

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the medium shells in boiling water until al dente according to package instructions.
  3. In a skillet, melt the butter over medium heat. Add the diced onion and red bell pepper, and sauté until tender, around 5 minutes. Stir in the chili powder and seasoned salt.
  4. In a large mixing bowl, combine the condensed cream of chicken soup, the onion and pepper mixture, the milk, 2 cups of shredded cheddar cheese, and the shredded Parmesan cheese. Mix everything well. Then, add in the chopped cooked chicken, green chiles, and cooked pasta, stirring to combine.
  5. Spread the mixture into a 9×13 inch casserole dish. Top with the remaining shredded cheddar cheese.
  6. Bake in the preheated oven for 30 to 35 minutes, or until the casserole is hot and bubbly.

Notes

For extra flavor, you can add spices or herbs like garlic powder or paprika to the mixture.
To make it a complete meal, serve with a side salad or steamed vegetables.
