- 8 oz mozzarella pearls
- 2 tablespoons finely chopped basil

- 3 large eggs
- 1 cup panko bread crumbs
- 3/4 cup freshly grated parmesan cheese
- 1 tablespoon finely chopped parsley

- balsamic glaze, for drizzling
- chopped fresh basil, for sprinkling
Instructions
- Prepare the caprese salad by mixing the halved tomatoes, mozzarella, basil, olive oil, minced garlic, salt, and pepper in a medium bowl.
- Butterfly the chicken breasts by slicing them horizontally on a cutting board, then cut each breast in half to create 4 pieces.
- Cover the chicken with plastic wrap and pound it down to about 1/4-inch thickness. Remove the wrap and season with salt and pepper.
- Combine flour, garlic powder, ½ teaspoon salt, and ¼ teaspoon black pepper in a shallow dish. In another bowl, whisk the eggs. In a third dish, mix panko, parmesan cheese, and parsley.
- Dredge each chicken piece in the flour mixture, dip into the eggs, and coat with the panko mixture, pressing to adhere. Repeat until all pieces are breaded.
- Heat olive oil in a large skillet over medium-high heat. Fry each piece of chicken for 2 to 3 minutes per side, until cooked through. Drain on paper towels and add more oil if needed for additional batches.
- Plate the fried chicken and top with the prepared caprese salad. Serve immediately.
