Description

Experience the irresistible flavor of Caprese Chicken Cutlets. This simple dish combines tender chicken, fresh tomatoes, creamy mozzarella, and aromatic basil, making it perfect for a quick dinner or a healthy meal at home. Enjoy a delightful homemade experience with this easy recipe!

Ingredients

Scale
  • 12 oz grape or cherry tomatoes, halved
  • 8 oz mozzarella pearls
  • 2 tablespoons finely chopped basil
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • kosher salt and black pepper, to taste
  • 2 boneless skinless chicken breasts, about 1 ½ lbs
  • kosher salt and black pepper, for seasoning
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 3 large eggs
  • 1 cup panko bread crumbs
  • 3/4 cup freshly grated parmesan cheese
  • 1 tablespoon finely chopped parsley
  • 1/2 cup olive oil, for frying
  • balsamic glaze, for drizzling
  • chopped fresh basil, for sprinkling

Instructions

  1. Prepare the caprese salad by mixing the halved tomatoes, mozzarella, basil, olive oil, minced garlic, salt, and pepper in a medium bowl.
  2. Butterfly the chicken breasts by slicing them horizontally on a cutting board, then cut each breast in half to create 4 pieces.
  3. Cover the chicken with plastic wrap and pound it down to about 1/4-inch thickness. Remove the wrap and season with salt and pepper.
  4. Combine flour, garlic powder, ½ teaspoon salt, and ¼ teaspoon black pepper in a shallow dish. In another bowl, whisk the eggs. In a third dish, mix panko, parmesan cheese, and parsley.
  5. Dredge each chicken piece in the flour mixture, dip into the eggs, and coat with the panko mixture, pressing to adhere. Repeat until all pieces are breaded.
  6. Heat olive oil in a large skillet over medium-high heat. Fry each piece of chicken for 2 to 3 minutes per side, until cooked through. Drain on paper towels and add more oil if needed for additional batches.
  7. Plate the fried chicken and top with the prepared caprese salad. Serve immediately.

Notes

For a crispier texture, ensure the oil is hot before adding the chicken.
Feel free to add more herbs or spices to the coating for extra flavor.
Serve with a drizzle of balsamic glaze for an added tangy sweetness.
