Description

This Breakfast Casserole is a perfect blend of flavors with pork sausage, eggs, and sharp cheddar cheese. It’s simple to prepare ahead of time, making it an ideal choice for gatherings or special occasions. Enjoy a delicious, filling meal that everyone will love!


Ingredients

  • 1 pound pork sausage
  • 10 large eggs lightly beaten
  • 3 cups milk
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • 6 cups cubed bread
  • 2 cups shredded sharp cheddar cheese
  • ½ cup diced red pepper optional
  • sliced green onion optional

Instructions

  1. Preheat your oven to 325°F if baking immediately.
  2. Grease a 9x13x2-inch casserole dish with a non-stick spray or butter.
  3. In a large skillet, cook the pork sausage over medium-high heat, stirring frequently until cooked through and no longer pink.
  4. In a large bowl, whisk together the eggs, milk, and fine sea salt until well combined.
  5. Layer half of the cubed bread in the casserole dish, then sprinkle with half the cheese, half the black pepper, half the red pepper, and half the cooked sausage. Repeat this layering process.
  6. Pour the egg mixture evenly over the layered ingredients in the dish.
  7. Cover and refrigerate overnight or bake right away.
  8. If baking, place the uncovered casserole in the preheated oven and bake for 60-75 minutes until the eggs are set. If the top browns too quickly, cover loosely with foil.
  9. After baking, if desired, sprinkle with sliced green onions before serving warm.

Notes

For a spicier version, consider adding jalapeños in place of or along with the red pepper.
You can use any type of cheese you prefer if sharp cheddar isn’t available.
This casserole can be prepared a day in advance, making it perfect for busy mornings.
