- 1 cup vegetable oil
- 2 cups granulated sugar

- 1 tablespoon baking powder

- 14 ounces sweetened condensed milk (one 14 oz can)
- 3 tablespoons unsweetened cocoa powder
- 2 tablespoons unsalted butter
- 1/3 cup evaporated milk
- 1/3 cup dark chocolate chips

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Blend the chopped carrots, eggs, vegetable oil, and granulated sugar until smooth and slightly frothy, about 60 seconds.
- In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
- Pour the carrot mixture into the dry ingredients and gently fold until just combined, avoiding overmixing.
- Transfer the batter into the prepared baking pan and bake for 24-28 minutes, or until a toothpick comes out clean.
- For the glaze, combine sweetened condensed milk, cocoa powder, and butter in a saucepan over medium heat, stirring until smooth and slightly thickened (about 5 minutes).
- Add the evaporated milk, lower the heat to medium-low, and simmer while stirring for 2-3 minutes until the glaze thickens.
- Remove from heat and stir in dark chocolate chips until melted and glossy.
- After the cake has cooled in the pan for about 10 minutes, pour the warm glaze over it, spreading to the edges and topping with chocolate sprinkles. Let it cool completely before slicing.
Notes
Allowing the cake to cool slightly before glazing helps the glaze absorb better without melting right through.
