Description
These boxty, or Irish potato pancakes, offer a wonderful mix of creamy mashed and crispy grated potatoes. Simple to prepare, this dish is great for quick dinners or a comforting snack. Serve them hot with optional green onions or cheese for an extra flavor punch!

- 2 cups cold mashed potatoes
- 2 cups grated raw potatoes
- 2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon baking soda
- 1 1/2 to 2 cups buttermilk
- butter, bacon grease, or lard for frying
- optional add-ins: chopped green onions/scallions, shredded white cheddar cheese
Instructions
- Boil, drain, and mash the potatoes, then chill until cold or overnight.
- In a small bowl, mix the flour, baking soda, and salt. Set aside. Grate the raw potatoes, place them in a clean cloth, and wring out as much liquid as you can.
- In a large mixing bowl, combine the cold mashed potatoes, grated potatoes, and flour mixture.
- Add 1 1/2 cups of buttermilk and mix well. If it's too thick, add more buttermilk gradually until the desired consistency is achieved.
- Heat your preferred fat (butter, bacon grease, lard, or oil) in a heavy pan over medium-high heat. Scoop the mixture into the pan to form individual patties and flatten them.
- Fry until the bottom is golden brown, then flip to cook the other side until browned. Adjust heat if they cook too quickly.
- Transfer the cooked boxty to a warm oven while frying the remaining mixture.
- Serve hot for the best flavor.
Notes
Using starchy potatoes like russets ensures the best texture.
