These Blueberry Pie Bars feature a delightful crust, juicy blueberries, and a hint of lemon. Perfect for a sweet treat, they’re easy to make and ideal for gatherings.

- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F and line an 8×8 baking dish with parchment paper, leaving a 1” overhang for easy removal.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt. Add the melted butter and vanilla, stirring until well mixed.
- Press ⅔ of the crust mixture into the bottom of the prepared baking pan and set aside.
- In another bowl, mix the blueberries, lemon juice, sugar, cornstarch, and vanilla, then pour this mixture over the crust. Sprinkle the remaining ⅓ of the crust mixture over the blueberries.
- Bake in the oven for 55 minutes until the blueberries are bubbling and the crust is golden. Cool completely in the pan before lifting out with the parchment paper to slice into 9 bars.
Notes
If using frozen blueberries, do not thaw them before use for best results.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
These bars can be served warm or cold.
