- 2 cups all purpose flour
- 1 cup unsalted butter, room temperature
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 4 eggs
- 2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup lemon juice
- 2 teaspoons lemon zest, optional
- 1 cup fresh blueberries
Instructions
- In a medium bowl, mix the flour, salt, and powdered sugar. Cut in the butter until the mixture is crumbly.
- Grease a 9×13 inch baking pan. Firmly press the crust mixture into the bottom of the pan.
- Bake at 350°F for 18-20 minutes until golden brown. Set aside to cool.
- In another bowl, whisk the eggs, then add the sugar and flour, stirring well. Mix in the lemon juice and optional lemon zest.
- Pour the lemon mixture over the crust, then sprinkle the blueberries evenly on top.
- Bake for an additional 20-25 minutes until the top is just golden. Cool slightly on a wire rack.
- Refrigerate for at least 2 hours before serving. Sprinkle with powdered sugar and cut into bars.
