Description

These Blueberry Crumble Bars feature a buttery crumb base, fresh blueberries, and a sweet glaze, making them an irresistible treat ideal for gatherings or dessert at home.


Ingredients

  • 1 1/2 cups salted butter, softened
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 cups all-purpose flour
  • 1/4 cup sugar (for blueberries)
  • 1 teaspoon cornstarch
  • 4 cups fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat the oven to 350℉ and line a 9×13 inch pan with parchment paper.
  2. In a large bowl or the bowl of a stand mixer, combine the softened butter, sugar, vanilla extract, and salt.
  3. Scrape the sides of the bowl and stir in the flour until well combined.
  4. Press about 2/3 of the crumb mixture into the prepared pan and bake for 15 minutes.
  5. In a separate bowl, combine 1/4 cup sugar and cornstarch, then add the blueberries and stir gently to coat.
  6. Spoon the blueberry mixture over the baked crust and even it out across the base.
  7. Sprinkle the remaining crumb mixture over the blueberries evenly.
  8. Bake for an additional 30-35 minutes until golden brown and bubbly.
  9. For the optional icing, whisk together the powdered sugar and 2 tablespoons of milk, adding more milk as needed for drizzling consistency.
  10. Drizzle the icing over the cooled bars and serve.

Notes

Make sure to use fresh blueberries for the best flavor.
If desired, add lemon zest to the blueberry filling for a zesty kick.
Store leftover bars in an airtight container for up to 3 days.
