- 1 1/2 cups salted butter, softened
- 1 cup sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 3 cups all-purpose flour
- 1/4 cup sugar (for blueberries)
- 1 teaspoon cornstarch
- 4 cups fresh blueberries
- 1 cup powdered sugar
- 2 tablespoons milk (for icing)
Instructions
- Preheat the oven to 350℉ and line a 9×13 inch pan with parchment paper.
- In a large bowl or the bowl of a stand mixer, combine the softened butter, sugar, vanilla extract, and salt.
- Scrape the sides of the bowl and stir in the flour until well combined.
- Press about 2/3 of the crumb mixture into the prepared pan and bake for 15 minutes.
- In a separate bowl, combine 1/4 cup sugar and cornstarch, then add the blueberries and stir gently to coat.
- Spoon the blueberry mixture over the baked crust and even it out across the base.
- Sprinkle the remaining crumb mixture over the blueberries evenly.
- Bake for an additional 30-35 minutes until golden brown and bubbly.
- For the optional icing, whisk together the powdered sugar and 2 tablespoons of milk, adding more milk as needed for drizzling consistency.
- Drizzle the icing over the cooled bars and serve.
Notes
Make sure to use fresh blueberries for the best flavor.
If desired, add lemon zest to the blueberry filling for a zesty kick.
Store leftover bars in an airtight container for up to 3 days.
