Description

This Blueberry Cream Cheese Pie (No-Bake) is a delightful treat perfect for any occasion. With its creamy filling, fresh blueberries, and a buttery graham cracker crust, it’s an easy homemade dessert that satisfies all cravings!


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons melted butter
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 1/2 cups heavy whipping cream
  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water)
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the graham cracker crumbs, 1/3 cup sugar, and melted butter until well combined.
  2. Press the mixture firmly into a 9-inch deep pie dish to form the crust. Chill it while you make the filling.
  3. In a large bowl, beat the softened cream cheese until smooth.
  4. Gradually add in the powdered sugar, 1 teaspoon vanilla extract, and 1 tablespoon lemon juice, mixing until combined.
  5. In another bowl, whip the heavy cream until stiff peaks form.
  6. Fold the whipped cream into the cream cheese mixture until well blended.
  7. Pour the filling into the chilled crust and spread evenly.
  8. In a saucepan, combine blueberries, 1/4 cup sugar, 1 tablespoon lemon juice, and the cornstarch mixture over medium heat, cooking until the blueberries soften and the mixture thickens.
  9. Let the blueberry topping cool, then pour over the cream cheese filling in the pie crust.
  10. Refrigerate for at least 2 hours before serving to set.

Notes

You can use fresh or frozen blueberries, but make sure to thaw the frozen ones first.
For a sweeter pie, adjust the sugar in the blueberry topping according to your taste.
This pie can be made a day in advance for convenience.
