- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste, or extract
- 1 graham cracker, crushed
Instructions
- In a small saucepan, combine blueberries, maple syrup, and lemon juice. Bring to a boil, then lower the heat and simmer for 10 minutes, or until blueberries reduce by half.
- Remove the saucepan from heat and allow the mixture to cool for 10 minutes.
- While cooling, blend the cottage cheese, additional maple syrup, cornstarch, and vanilla bean paste until smooth and creamy.
- In popsicle molds, layer the blueberry sauce followed by the cottage cheese mixture.
- Add crushed graham cracker on top.
- Freeze the popsicles for at least 5 hours or overnight.
