Ingredients

  • ¾ cup fresh blueberries, or frozen
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • ¾ cup 4% cottage cheese
  • 3 tablespoons maple syrup
  • ½ teaspoon cornstarch
  • ½ teaspoon vanilla bean paste, or extract
  • 1 graham cracker, crushed

Instructions

  1. In a small saucepan, combine blueberries, maple syrup, and lemon juice. Bring to a boil, then lower the heat and simmer for 10 minutes, or until blueberries reduce by half.
  2. Remove the saucepan from heat and allow the mixture to cool for 10 minutes.
  3. While cooling, blend the cottage cheese, additional maple syrup, cornstarch, and vanilla bean paste until smooth and creamy.
  4. In popsicle molds, layer the blueberry sauce followed by the cottage cheese mixture.
  5. Add crushed graham cracker on top.
  6. Freeze the popsicles for at least 5 hours or overnight.

Notes

For a sweeter taste, feel free to adjust the amount of maple syrup used.
Using frozen blueberries can make this recipe accessible year-round.
