Description

This blackberry vinaigrette offers a fantastic flavor profile with simple ingredients like fresh blackberries and olive oil. It’s perfect for drizzling over salads or enhancing any meal with a healthy, homemade touch.

Ingredients

Scale
  • 1 cup (140 g) blackberries, fresh or frozen
  • ½ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon honey, or more to taste
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely minced shallot
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dijon mustard

Instructions

  1. Combine the blackberries, olive oil, apple cider vinegar, honey, lemon juice, shallot, salt, pepper, and Dijon mustard in a blender or a jar suitable for an immersion blender.
  2. Blend the mixture until it is completely smooth and emulsified.
  3. Taste the vinaigrette and adjust the seasoning if necessary, adding more honey for sweetness or vinegar for a brighter flavor.
  4. Serve right away or refrigerate until needed. If the vinaigrette separates, shake well before serving.

Notes

For a sweeter vinaigrette, increase the amount of honey according to your taste.
This vinaigrette can be stored in the fridge for up to a week.
Experiment with different herbs for a unique twist!
