This Blackberry Cheesecake Cottage Cheese Ice Cream combines creamy cottage cheese with fresh blackberries for a refreshing dessert. Easy to prepare and perfect for hot days, its blend of flavors makes it an irresistible treat for dessert lovers.

- 22 oz. full-fat cottage cheese
- 1/4 – 1/3 cup honey
- 1 tsp vanilla extract
- 1 cup + 1/3 cup fresh blackberries
- 3 graham cracker sheets
- 1/2 tsp flakey salt (optional)
Instructions
- Place cottage cheese, honey, and vanilla extract in a high-speed food processor. Blend on high for 3-5 minutes until thick and creamy.
- Add 1 cup of fresh blackberries to the processor and pulse until they are slightly broken and combined, turning the mixture a light purple.
- Transfer the mixture into a bowl or loaf pan. Crumble two graham crackers on top and fold into the mixture.
- Top with remaining blackberries and crumble one graham cracker. Optionally sprinkle with flakey salt.
- Cover and place in the freezer for at least 4-6 hours or overnight.
- Serve in a dish or on an ice cream cone.
Notes
For a sweeter ice cream, adjust the honey to taste within the suggested range.
Use fresh blackberries for the best flavor, but frozen may work in a pinch.
